- 10 cups popped popcorn
- 1/4 c. butter
- 4 T. light corn syrup
- 1/2 c. sugar
- 3 oz Jello, any flavor, not sugar-free (raspberry shown)
Melt butter and corn syrup in a medium saucepan over low heat. Mix until thoroughly combined.
Add sugar and Jello and mix well.
On medium heat, bring to a boil, stirring frequently. Reduce heat to low and simmer for 5 minutes.
Put popped corn in a large, disposable, aluminum roaster pan (or regular pan of the same size and type if you prefer not to use a disposable one).
Pour Jello mixture over popcorn and immediately stir together well.
Pop into the oven for 5 minutes. Remove and stir well, further covering the popcorn.
Pop back into the oven for 5 minutes, remove and stir well.
One more time, pop back into the oven for 5 minutes, remove, and stir well - this time until the popcorn cools and doesn't stick together anymore, breaking apart globs into individual pieces.
The sessions in the oven help dry the Jello mix so that it is crunchy and not sticky - don't skip this part.
Serve when cool.
Since Jello comes in many colors and flavors, this popcorn can be made for any holiday that is color-themed. Valentine's (red, pink), St. Patrick's Day (green), July 4th (red and blue), Easter (multi), Halloween (orange and purple), Christmas (red and green), etc.
