This came from the can of Wyman's blueberries, and I used it so often that I had it memorized in my head. Then came a period of time when I didn't bake it. When I bought some blueberries, the recipe was no longer on the can. Panic! I couldn't remember the recipe so I wrote to the company and they sent it to me. Soon after that the recipe started showing up on the can label again but isn't there right now.
- 1/4 c. sugar
- 1 1/2 T. flour
- 1/5 t. salt
- 1/5 t. cinnamon (I don't use this.)
- 1 #300 can Wyman's blueberries in heavy syrup
- 1 1/2 T. butter
Combine sugar, flour, salt, and cinnamon. Stir in liquid drained from berries. Heat, stirring constantly until thick. Add butter and blueberries. Gently pour into an unbaked pastry shell and cover with top crust.
Bake in a moderately hot oven 400° for 30 minutes. One teaspoon lemon juice may be added if desired. Makes one 8 inch pie.
