1/2 cup strawberries, cleaned and halved
1/2 cup fresh pineapple chunks
1/4cup orange juice

Puree in blender until smooth.

BAKER'S HOLIDAY TRIFLE

Contributed by Mary Jo Tansy 1 pkg instant vanilla pudding 3 c milk 6 squares white chocolate, coarsely chopped 1 small Cool Whip, thawed ½ frozen pound cake 1/4 c orange juice 2-1/2 c sliced and sweetened fresh strawberries 5 squares white chocolate, grated 6 whole strawberries for garnish 1 square white chocolate, melted Prepare pudding according to package directions with milk. Remove from heat; stir in chopped chocolate until melted and smooth. Cover with plastic wrap. Chill. Fold in 1 c whipped topping. Cut cake into small cubes and drizzle with orange juice. In the bottom of a deep glass bowl, layer half the cake cubes, half the berries, half the pudding, and half the grated chocolate. Repeat layers, ending with chocolate. Top with remaining whipped topping. Garish with berries. Drizzle melted chocolate over top.

NORDIC SEED CRACKERS

Contributed by Mary Jo Tansy; Original at Kvalifood.com 3.5 oz pumpkin seeds 3.5 oz sunflower seeds 5 oz sesame seeds 5 oz flax seed 1.5 oz chia seed 1 oz psyllium husk powder 1½ teaspoon salt 2 teaspoon baking powder 3 cups water Little less than ½ cup oil (I use inexpensive olive oil without flavor) Cut the seed into smaller bits using either a knife or a food processor (resist turning into a flour). Mix all the dry stuff and stir it together. Mix the wet stuff (water and oil) and add to the dry ingredients. Let it rest for half an hour until it absorbs the moisture and becomes a solid dough. Divide the dough into 4 equal pieces. Each piece fits a regular European baking pan of 24 inches. Put the dough onto a piece of baking paper. Add another piece of baking paper on top and flatten the dough with a rolling pin or the like. Put the dough on a baking pan while still inside the baking two papers. BASIL SALAD DRESSING

Contributed by Tamalin Christen 1/4 cup fresh basil leaves 1 garlic clove Lemon zest and lemon juice from 1 lemon 1 tablespoon white wine vinegar 2 tablespoons extra-virgin olive oil Salt and pepper Put all ingredients in a blender and blend until smooth. Taste and adjust seasonings. I usually add a little more olive oil to get it to the right consistency. I like it over this Spring Green Salad: 1 bunch asparagus, tender parts, chopped into 1-inch pieces 1/2 cup frozen peas, thawed 2 radishes (I like watermelon radishes), thinly sliced 1/2 cup crumbled feta cheese 1 small avocado, pitted and diced 1/4 cup chopped toasted pistachios Salad greens (I like a spring mix) Salt and pepper

JELLO COOKIES

Contributed by Mary Jo Tansy 3⁄4 cup butter 1⁄2 cup sugar 1 (6 ounce) package Jello gelatin, any flavor 2 eggs 1 teaspoon vanilla 2 1⁄2 cups flour 1 teaspoon baking powder 1 teaspoon salt Preheat oven to 350° F. Cream margarine, sugar, jello, and eggs together in a medium to a large bowl. Add the rest of the ingredients. Mix well. Roll dough into little balls and place on a greased and floured cookie sheet or use parchment. Flatten each with a fork. (Sometimes a little flour on the fork keeps it from sticking). Bake 6-8 minutes. Makes 24 -30 cookies.
