This is one of my favorite side dishes. The goal is to enhance the tomato flavor with heat; they should not cook and never burst or become mushy.
- 3 T. sweet butter (can use half butter, half olive oil)
- 2 pints cherry tomatoes, stemmed, rinsed and dried
- Salt and freshly ground black pepper to taste
Melt the butter in a heavy skillet. Add the tomatoes and raise the heat. Shake and roll the tomatoes around in the butter until they are shiny and heated through, no more than 5 minutes. Do not overcook. Season with salt and pepper, and serve immediately.
