RHUBARB CAKE

  • Yellow (or white) cake mix
  • 4 cups rhubarb diced (I like to replace 1-2 of these cups with strawberries)
  • 1 cup sugar
  • 1 pint whipping cream
Prepare cake, pour in a cake pan and sprinkle rhubarb over the mix. Then sprinkle the sugar over the rhubarb and pour the cream on top. Bake at 350° for 40-50 minutes.
