Adapted from Elaine Nelson’s recipe, which was originally Zelma Romney’s recipe (teamwork through the ages!)
- 1 quart mayonnaise
- 1 quart buttermilk
- 2-3 Tbs. dried parsley flakes
- 4 tsp. onion powder
- 1 Tbs. Real Salt
- 1 1/2 tsp. pepper
- 1 tsp. garlic powder
- 1/2 tsp. Xanthan gum (or more if needed)*
Mix everything together except xanthan gum. Put about 3 cups mixture in the blender, turn the blender on and add xanthan gum while the blender is running. Mix back into the rest of the dressing. Chill before serving.
* Xanthan gum is a powdered thickener; I bought mine at Good Earth at least 10 years ago. I keep it in a glass container in the fridge and use it whenever I need to thicken salad dressings, dips, etc. It clumps if not mixed into the liquid fast so I always use the blender.
