PINEAPPLE BAVARIAN CREAM

This is a recipe my mother used when I was growing up and it always brings back warm memories. It was from an old Dormeyer Mixer recipe book.
  • 1 Tbs. gelatin
  • 3/4 C chilled cream
  • 1/2 C cold water
  • 1 C crushed, drained, canned pineapple
  • 2/3 C sugar
  • Dash of salt
Soak gelatin in cold water for 5 minutes. Scald milk and dissolve gelatin in it. Add...sugar and dash of salt to combined milk and gelatin. Dissolve completely and set mixture aside to cool before putting into refrigerator. Whip chilled cream in a small chilled bowl for 1/2 minute. When gelatin mixture begins to congeal, transfer to a large bowl and beat 2 to 3 minutes. Add pineapple and beat a few seconds longer. Fold in whipped cream and set in the refrigerator.
