OATMEAL RAISIN COOKIES

  • 1/2pound butter (1 cup), at room temperature
  • 1 cup peanut butter (could use either smooth or chunky)
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 2 1/2cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
Preheat oven to 375°. 

Cream the butter, peanut butter, and sugars together until light and fluffy (about 3 minutes). Add the eggs and vanilla and mix well. 

Sift together the dry ingredients and add to the butter-sugar mixture. Mix well. Roll the dough into walnut-sized balls and roll the balls in sugar. Place balls on the cookie sheet but do not flatten. 

Bake for about 10 - 12 minutes until cookies are flattened, crackled on top and barely brown. Cool slightly on the pan, then transfer to a wire rack to cool completely. Makes about 4 dozen.

Variations: omit the raisins and add chocolate chips, or add dried cranberries and white chocolate chips.
