GOLDEN SYRUP

This syrup is used to make Treacle Tart - a favorite Harry Potter recipe.

  • 1/2 c. sugar
  • 3 T. water
  • 1-1/2 c. boiling water
  • 2 - 1/3 c. sugar
  • 1/2" thick slice of lemon
Caramelize:
Mix 1/2 c. sugar and 3 T. water in a saucepan over medium heat. Stir until dissolved and then cover. It helps if the lid is glass and it fits tightly on the saucepan. Watch the solution carefully, swirling the pan occasionally, until the solution turns the color of tea (this can take 20 minutes to reach). Avoid opening the lid and stirring as the water will evaporate and leave you with dried sugar.

Slowly add the boiling water, mixing thoroughly. The water has to be boiling to prevent the caramelized liquid from hardening or separating. 

Add the rest of the sugar and stir until dissolved. Add lemon slices and simmer, uncovered for 45 minutes.

Let cool completely and strain into glass jar(s) or use immediately.

This can be used over ice cream or pancakes/waffles/french toast - anything any other syrup can be used for.
