FROZEN PEACHES PLUS

Helen makes this in the fall when the peaches are ripe and freezes it in individual serving sizes. All winter she had treats waiting for her in the freezer. She sometimes partially thaws it and serves it with a little Sprite or Fresca over the top or puts it over ice cream. It’s also good with a dab of cool whip on top.
  • 2 cups orange juice
  • 1 cups sugar or sugar substitute
  • peaches
Place 1 cup of orange juice and sugar in a container. Microwave at 100% power for 2-3 minutes. Stir to dissolve. Add remaining orange juice. Cool. 

Add the following:
  • 1 can (15-18 oz. pineapple tidbits and juice
  • 2 cans mandarin oranges and juice
  • 15-18 fresh peaches (about 10-12 cups, peeled and diced)
  • 2 Tbs. fruit fresh, optional
Mix in a large container. Divide among pint jars or other freezer-safe containers, leaving 1-inch headroom for expansion. Divide into quantities appropriate for your need. Label and date containers. Freeze.
