EASY QUICHE

I had quiche at a luncheon after a baptism and wanted more but didn't want the calories or fuss of a pie crust so I did an Internet search and found this easy recipe. I think it tastes like the real thing.
  • 2 tablespoons butter
  • 1/2 large or 1 small onion, minced
  • 2 handfuls fresh spinach, chopped OR a handful frozen spinach, thawed and squeezed almost dry OR some minced fresh broccoli OR some frozen chopped broccoli, thawed and drained
  • 4 eggs, beaten
  • 1-1/2 cups milk (soy milk is fine)
  • 1/2 cup flour
  • 1/2 to 1 cup shredded cheddar cheese
  • 1/2 to 1 teaspoon salt
  • Optional ingredients--1/2 to 3/4 cup of additional fillers such as ham, bacon, etc.
Preheat oven to 350°.

Sauté onion in butter about 2 minutes, add fresh spinach or fresh broccoli and sauté about 2 more minutes. 

Spray a 9-inch pie pan with veggie spray. 

Combine eggs, milk, flour, salt and whisk together until smooth. Add sautéed onion and spinach or broccoli. 

Pour into pie pan. Stir in and any other optional items. Bake in oven for 35-40 minutes, until set.
