CHICKEN AND SWISS WITH STUFFING

  • 1 box chicken flavored stuffing mix
  • 1 small onion, diced
  • 1 large carrot, grated
  • 2 tablespoons butter
  • 4 to 6 chicken breasts, pounded flat
  • 1 can cream of chicken soup
  • 1 cup half and half (or milk works too)
  • 4 to 6 slices Swiss cheese
Saute onion and carrot in butter. Spread stuffing mix (bread part) in the bottom of a 9X13 pan. Top evenly with sauteed onion and carrot. Place chicken breasts on top. 

Sprinkle stuffing mix seasoning packet over the top of chicken. Mix together soup and half and half (or milk) and pour over chicken. 

Cover dish with foil and bake for 45 minutes at 350°. Remove covering, and place a slice of Swiss cheese over each chicken breast.

Return to oven for about 10 minutes uncovered. 

Serves 4 to 6. 

You can add other vegetables to the carrot and onion if desired, like zucchini or yellow squash, mushrooms, or celery.

Note: If using this for the Food Coalition cut the chicken into chunks so it can be dished out with a spoon.
